Zapatera Island is the remnant of an extinct volcano formed on Nicaragua’s Pacific volcanic fracture. This ancient geologic structure was formed probably even before Lake Cocibolca. With a strait of water 2 to 5 km wide separating it from the coast, this rectangular-shaped island is the second largest island in Lake Cocibolca.

Years ago, all the milk consumed in Nicaraguan homes was distributed by small cattle farmers that lived in the outskirts of cities. Every day, around five in the morning, farmers would go out to rural roads or city streets on horse-pulled carts to sell their milk. People, colloquially, call this unpasteurized milk “leche de vaca” (cow milk). After buying the milk from the farmers, people would boil the milk before consuming it, but they sometimes would set a portion aside in order to let it culture to make soured the milk.
